Preheat oven to 350º F. Whisk egg and oil together until well blended (about 30 seconds) in mixing bowl. Add dry mix and fold until blended. Drop 1 TBSP of mixture onto a baking sheet lined with parchment paper, or ungreased baking sheet. Flatten cookie dough and bake for 13-15 minutes. Yields Approx. 10 Cookies
