Rye flour adds a warm color, slightly nutty flavor and a toothsome texture to baked goods. Due to its low gluten content, it works well in tender pastries like cookies, biscuits and cakes. Rye is also "thirstier" and therefore benefits from adding extra liquid when substituting for all-purpose flour. Pain it with dark chocolate, ginger and cinnamon to heighten its flavor.
