





Starting the day with a delicious balanced breakfast is in our roots. That's why we added an extra boost of sweet potato, zucchini, carrots, and a touch of cinnamon to our scrumptious pancake & waffle mix. Because there's no such thing as too many veggies, right?
What is Birch Bending?
Birch bending, like pancake making, is a great American tradition. Birches are slender yet supple trees that will bend down and return you to the ground when you climb them, like a fishing pole under the weight of a catch. As a young boy in Maine, our founder Matt spent his summers bending birches. Years later, he would carry that same playful spirit to his love of pancake-making, and eventually, to the brand he hoped to share with the world. After all, as Robert Frost said in his poem "Birches". "One could do worse than be a swinger of birches.
Suggested use
Now let's make some pancakes. All you need is water!
4" PancakesMix Water 62/3 cup
1/2-2/3 CupMake the entire bag
1 bag 1 3/4 cups
Make
Mix. Batter will be thin at first. Let it sit for a few minutes to thicken. Cook over medium heat on a lightly greased skillet, flip once, and serve when golden brown.
Prefer Waffles?
To make four 4" waffles, blend: 1 cup mix, 2/3 cup water, and 2 tbsp. oil. Cook according to waffle iron instructions.

Brown rice flour, potato starch, almond flour, cassava starch, sweet potato powder, non-gmo cane sugar, carrot powder, zucchini powder, leavening (monocalcium phosphate, sodium bicarbonate), salt, cinnamon.
