    Suggested use

    Our Blue Ribbon Method

    Brine: In a medium pot, combine brine blend* with 2 cups water and bring to a boil for 5 minutes. Remove from heat, add 1/2 gallon cold water, and refrigerate until cool.

    Place up to 8 lbs. of chicken in the brine bag ** and set in a pan for support. Pour cooled brine mix over chicken. Add cold water if needed until fully submerged and seal bag tightly. Refrigerate for 2-4 hours.

    *For meat under 4 lbs ., use half the brine blend with half the water listed.

    ** Do not use the brine bag on the grill!

    Season: Remove chicken from bag. Rinse thoroughly and pat dry. Drizzle with oil and sprinkle with Savory Southern Chicken Rub, distributing evenly.

    Grill: Grill chicken over medium heat until the internal temperature is 165ºF. Flip and rotate to avoid heavy charring. Brush with BBQ sauce for the last 2-3 minutes of grilling. Remove chicken from grill and let rest for 10 minutes. Carve, serve, and enjoy.

    Pitmaster Tips & Tricks

  • Make the brine in advance and refrigerate it for up to a week.
  • Brine larger cuts for the full 4 hours and smaller cuts for just 1-2 hours to ensure optimal flavor.
  • For sticky glazed meat, wait to brush the bbq sauce on until the last few minutes of grilling. Turn often so sauce can caramelize without burning.
  • After grilling, allow chicken to rest in order for the juices to fully saturate the meat.
  • Other ingredients

    Brine Blend: Sea salt, sugar, spices (white peppercorns, black peppercorns, green peppercorns, pink peppercorns, sage, rosemary, thyme, bay leaves), orange peel.

    Savory Southern Chicken Rub: Brown sugar, salt, spices (chili pepper, black pepper, cumin, coriander), onion & garlic powder, tomato powder, yeast extract, natural smoke flavor, natural rosemary extract, and less than 2% soybean oil & silicon dioxide added to prevent caking.

    BBQ Sauce: Water, sugar, tomato paste, molasses, white distilled vinegar, salt, modified corn starch, spices, citric acid, mustard powder.
