Lavender is a genus of 39 species of flowering plants in the mint family, Lamiaceae. The most common "true" species in cultivation is the Common Lavender, Lavandula angustifolia. A wide range of cultivars can be found.

In Provence, France, chefs have been incorporating this herb into their cuisine for centuries, either alone or as an ingredient of herbes de Provence.
Flavor and Pairing
Lavender lends a floral, slightly sweet, and elegant flavour to most dishes. It pairs beautifully with various sheep and goat milk cheeses. In cooking, it is usually the dried flowers (buds) of lavender that are used, though some chefs experiment with the leaves as well.
