    Originally built in 1388, the idyllic Monastery of Montebello has long served as an emblem of agriculture in northern Italy. Today, a cooperative of family farms continues the tradition, employing sustainable practices to maintain the integrity of both land and crops. In tandem with an on-site mill and artisanal factory, they take organic durum wheat from seed to semolina flour to finished pasta in a meticulous process that delivers Italian excellence in every bite.

    Suggested use

    Cook for 8-10 minutes.

  • Add 4 quarts water and 1 1/2 Tbsp. salt per pound of pasta to a large pot.
  • Bring to a boil and add pasta, stirring immediately to prevent clumping.
  • Drain, sauce, and serve.
