You couldn't forage for a better risotto. Made with a base of aromatic onions and garlic, creamy Arborio rice, and finished with umami-rich mushrooms, it's a side or a full-size dish that really satisfies. Add some pepper, Parmesan and parsley to feel like a culinary genius.
