Green Lentils
North American family organic Green Lentils cook much quicker than beans. Use with whole grain, in soup, stew, salad, dips. An early cultivated crop. Vegetal protein, B vitamins, iron, magnesium, zinc, fiber, and antioxidants. Farmers we know and trust.

Wash - the lentils with cold water. Lentils do not need to be soaked.
Cook - use a heavy pot, add water about 21/2 to 3 times the amount of lentils, and sea salt.
Cover, bring to a boil, reduce heat to a low- medium and simmer for about 50 minutes. Let sit covered for 10 minutes. Put in serving dish and garnish with minced parsley and/or chopped scallions.
Note 1/2 cup dry lentils = 1 1/2 cups cooked.
